Ingredients
  

Meat and Vegetables
  • 1 lb Ground beef (or ground turkey) You can substitute with ground turkey or chicken.
  • 1 medium Onion, diced small
  • 1 cup Frozen mixed vegetables or green beans Frozen mixed veggies are convenient; choose one if preferred.
Creamy Base
  • 1 can Cream of mushroom soup Cream of chicken or cream of celery can be used as alternatives.
  • 0.5 cup Milk or broth Added to loosen the sauce if needed.
Toppings
  • 2 cups Shredded cheddar cheese Optional, but adds extra comfort.
  • 32 oz Frozen tater tots
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F. Get a 9x13 baking dish ready.
  2. Brown the ground beef in a skillet over medium heat. Add the diced onion and cook until softened. Season with salt and pepper. Drain excess grease.
  3. Stir in the cream of mushroom soup and a splash of milk or broth until creamy. Add frozen vegetables and warm it for a minute.
  4. Spread the beef mixture into the baking dish. If you're using cheese, sprinkle it evenly on top.
  5. Arrange the frozen tater tots in an even layer over the filling.
Baking
  1. Bake for about 35 to 45 minutes, until the filling is bubbling and the tots are golden. Broil for 1-3 minutes if necessary to crisp the tots.
  2. Let the casserole rest for 5 to 10 minutes before serving.

Notes

For best results: freeze the filling without tots for later use. Reheat with foil to keep moisture, then uncover to crisp. Serve with a light and fresh side like salad or steamed broccoli.
