Preparation
- Preheat your oven to 375°F. Get a 9x13 baking dish ready.
- Brown the ground beef in a skillet over medium heat. Add the diced onion and cook until softened. Season with salt and pepper. Drain excess grease.
- Stir in the cream of mushroom soup and a splash of milk or broth until creamy. Add frozen vegetables and warm it for a minute.
- Spread the beef mixture into the baking dish. If you're using cheese, sprinkle it evenly on top.
- Arrange the frozen tater tots in an even layer over the filling.
Baking
- Bake for about 35 to 45 minutes, until the filling is bubbling and the tots are golden. Broil for 1-3 minutes if necessary to crisp the tots.
- Let the casserole rest for 5 to 10 minutes before serving.
Notes
For best results: freeze the filling without tots for later use. Reheat with foil to keep moisture, then uncover to crisp. Serve with a light and fresh side like salad or steamed broccoli.
