Tiramisu

This classic Italian dessert features layers of creamy mascarpone cheese and rich coffee, making it a perfect end to any meal.

Ingredients
  

Custard Base
  • 6 large large egg yolks
  • 3/4 cup granulated sugar, divided 1/2 cup for the custard, 1/4 cup for whipping cream
  • 1/4 cup water
  • 16 oz mascarpone cheese, room temperature Choose high-quality mascarpone for best results.
Creamy Mixture
  • 1.5 cups heavy cream, cold
Coffee Mixture
  • 1.5 cups strong brewed espresso or strong coffee, cooled
  • 3 tbsp coffee liqueur, optional For an adult twist
Layering Ingredients
  • 2 (7 oz) packages ladyfinger cookies (savoiardi) Can substitute with sponge cake.
  • 2 tbsp unsweetened cocoa powder, for dusting
  • Dark chocolate shavings, for garnish, optional

Method
 

Preparation
  1. In a heatproof bowl set over a pot of gently simmering water, whisk together the egg yolks and 1/2 cup of sugar constantly for 8-10 minutes until thickened.
  2. Remove from heat and let cool to room temperature.
  3. In a separate bowl, beat the mascarpone cheese until smooth. Gently fold the cooled egg yolk mixture into the mascarpone until well combined.
  4. In another bowl, whip the heavy cream with the remaining 1/4 cup of sugar until stiff peaks form.
Assembly
  1. Gently fold the whipped cream into the mascarpone mixture in two additions.
  2. In a shallow dish, combine the cooled espresso with the coffee liqueur, if using.
  3. Quickly dip each ladyfinger into the coffee mixture for one second on each side and arrange them in a single layer in a 9x9-inch dish.
  4. Spread half of the mascarpone mixture evenly over the ladyfingers.
  5. Repeat the layering process with the remaining ladyfingers and top with the remaining mascarpone mixture.
Chilling and Serving
  1. Cover and place in the refrigerator for at least 6 hours, or ideally overnight.
  2. Before serving, dust the top generously with cocoa powder and add dark chocolate shavings if desired. Cut into squares and serve chilled.

Notes

Store Tiramisu in the refrigerator for up to 4 days or freeze for up to 3 months. Allow to chill for a minimum of 6 hours for best results.
