Preparation
- Cream the softened butter and granulated sugar until fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the dry ingredients.
- Gradually mix the dry ingredients into the butter mixture.
- Pour in the buttermilk and mix until just combined.
- Scoop the dough onto a baking sheet and lightly flatten each ball.
Baking
- Preheat the oven to 350°F (175°C).
- Bake cookies for about 8-10 minutes, until the edges are lightly golden.
- Remove from oven and let them set on the pan for a couple of minutes before transferring to a wire rack.
Notes
For softer cookies, pull them from the oven a minute earlier than you think. The cookies will continue to bake on the hot pan as they cool. If the dough feels too sticky or your kitchen is warm, chill it for 20-30 minutes before baking.
