  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt (optional) Can substitute for mayonnaise.
  • 1 cup diced celery
  • 1/2 cup chopped red onion
  • 1/2 cup pecans, chopped Add for crunch.
  • 2 tablespoons Dijon mustard Enhances flavor.
  • Salt and pepper to taste
  • Lettuce leaves for serving Optional, for serving.

Preparation
  1. Gather all your ingredients ensuring that the chicken is cooked and shredded, the celery and red onion are diced, and the pecans are chopped.
  2. In a large bowl, mix the mayonnaise and optional Greek yogurt until smooth and creamy.
  3. Add the diced celery, chopped red onion, and chopped pecans to the bowl.
  4. Add the shredded chicken and pour in the Dijon mustard, then mix everything together until evenly coated.
  5. Season with salt and pepper to taste.
  6. Serve the chicken salad on crisp lettuce leaves or use as a sandwich filling.

Notes

Store in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for up to 2 months.
