Ingredients

Base Ingredients
  • 8 large eggs Large sized eggs are preferred.
  • 1/4 cup whole milk Can substitute with half-and-half or oat milk.
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper
  • 2 tbsp olive oil For cooking the onion.
Filling Ingredients
  • 1 1/2 cups leftover cooked turkey, shredded or diced Use tender turkey for best results.
  • 1 cup leftover roasted vegetables, chopped Such as Brussels sprouts or green beans.
  • 1/2 cup leftover mashed potatoes or stuffing, crumbled Optional for added heartiness.
  • 1/4 cup red onion, finely diced Can be substituted with green onions.
  • 1 cup shredded Gruyere or sharp cheddar cheese Choose according to preference.
  • 2 tbsp fresh chives, chopped For garnish.

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until smooth and frothy.
Cooking
  1. Heat olive oil in a 10-inch oven-safe skillet over medium heat. Add red onion and cook for 2-3 minutes until softened.
  2. Add leftover turkey and chopped vegetables to the skillet. Warm through for 2-3 minutes.
  3. If using, scatter crumbled mashed potatoes or stuffing throughout the pan.
  4. Pour the egg mixture evenly over turkey and vegetables. Shake the pan gently to ensure eggs settle.
  5. Cook over medium-low heat for 4-5 minutes, allowing the edges to begin setting.
  6. Sprinkle cheese over the top and transfer the skillet to the oven. Bake for 15-18 minutes until puffed and golden, and a knife inserted in the center comes out clean.
Serving
  1. Let the frittata rest for 5 minutes before slicing. Garnish with fresh chives and serve warm.

Notes

Avoid using too wet ingredients to prevent a watery frittata. Watch closely while baking to prevent overcooking, and let it rest before slicing.
