  • 1 bell pepper, diced Add sweetness and freshness.
  • 1/2 cup shredded reduced-fat cheddar cheese Melt gently on top.
  • 1 tbsp olive oil Used for cooking sausage and browning hash browns.

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the turkey sausage, breaking it apart with a spoon, and brown for about 6 to 7 minutes.
  3. Remove the cooked sausage from the skillet and set aside.
  4. In the same skillet, add frozen hash browns and diced bell pepper. Press down to encourage crispness and cook for 8 to 10 minutes.
  5. Whisk eggs, milk, kosher salt, and black pepper in a bowl.
  6. Push the hash brown mixture to one side of the skillet and pour in the egg mixture to scramble for 3 to 4 minutes until just set.
  7. Return the cooked turkey sausage to the skillet, stir, and sprinkle cheddar cheese on top.
  8. Let it sit for one minute to allow the cheese to melt before serving.

Notes

This bowl is great for breakfast or brunch and can be customized with your favorite veggies or spices. Store leftovers in an airtight container in the refrigerator for up to 3 days.
