Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.

  4. Beat in the egg, then stir in the milk and orange zest until well combined.
  5. In a separate bowl, mix flour, baking powder, and salt, then gradually add to the wet ingredients.
  6. Gently fold in the prepared rhubarb mixture without overmixing.
  7. Pour the batter into the greased muffin tin and bake for 20-25 minutes.
Glazing
  1. While the muffins cool, make the glaze by mixing powdered sugar with orange juice.
  2. Once cooled, drizzle the glaze over each muffin.
