Preparation
- Preheat your oven to 350°F (175°C) and line your cupcake tray with paper liners.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 to 4 minutes.
- Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the creamed butter mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
- Spoon the batter into your prepared cupcake liners, filling them about two-thirds full.
Baking
- Bake the cupcakes for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from oven and let them cool in the tray for a few minutes before transferring them to a wire rack to cool completely.
Making the Frosting
- In a mixing bowl, beat the softened cream cheese, powdered sugar, strawberry puree, and vanilla extract together until smooth and creamy.
- Once the cupcakes are completely cool, frost them with the strawberry cream cheese frosting.
Notes
Store the cupcakes in an airtight container in the fridge for up to 5 days. They freeze well for about 3 months if wrapped properly.
