  • 2 tablespoons olive oil
  • 3 large onions, thinly sliced Sweet onions like Vidalia or Walla Walla recommended.
  • 1 teaspoon sugar Balances the natural acidity.
  • 4 cups vegetable broth Chicken broth can be substituted.
  • 1 cup water
  • 1 tablespoon soy sauce Tamari can be used as a gluten-free alternative.
  • 1 leaf bay leaf
  • Salt and pepper, to taste
  • Baguette slices Any crusty bread can be used.
  • 1 cup shredded cheese (Gruyère or mozzarella) For vegan option, use vegan cheese or nutritional yeast.

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sliced onions and sugar to the pot. Cook the onions, stirring occasionally, until they are caramelized, about 20 to 25 minutes.
  3. Pour in the vegetable broth and water, then add the soy sauce and bay leaf. Stir well.
  4. Season with salt and pepper to taste. Allow the soup to come to a gentle simmer for approximately 30 minutes.
Broiling
  1. Preheat the oven to broil.
  2. Ladle the soup into oven-safe bowls, place a baguette slice on top of each bowl, and sprinkle with shredded cheese.
  3. Broil for about 3 to 5 minutes, watching carefully until the cheese is melted and bubbly.
Serving
  1. Remove the bowls from the oven and serve immediately.

Notes

For best results, avoid rushing the caramelization process, season gradually, and monitor the broiling closely to prevent burning.
