Ingredients
  

Filling Ingredients
  • 1.5 cups dried green or brown lentils, rinsed Choose fresh and vibrant lentils.
  • 8 oz mushrooms, finely chopped Baby bella mushrooms can be used for a more robust flavor.
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 tbsp tomato paste
  • 3 cups vegetable broth Use mushroom broth for enhanced umami flavor.
  • 1 tbsp Worcestershire sauce (or vegetarian substitute) Soy sauce or balsamic vinegar can be used as substitutes.
Topping Ingredients
  • 3 cups mashed potatoes Can substitute with sweet potatoes for extra nutrition.
  • 1/2 cup shredded cheddar cheese Use vegan cheese for a dairy-free option.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Grab a 9x13-inch baking dish and set it aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté the diced onion, carrots, and chopped mushrooms for around 8 minutes until they are tender and the mushrooms release their moisture and brown lightly.
Build the Filling
  1. Add 2 tablespoons of tomato paste to the skillet and stir for about a minute.
  2. Then, toss in the rinsed lentils, the 3 cups of vegetable broth, and Worcestershire sauce. Bring this mixture to a boil, then lower the heat, partially cover, and let it simmer for about 22 to 25 minutes until the lentils are tender and the liquid is mostly absorbed.
Assembling the Pie
  1. Once cooked, carefully pour the lentil filling into your prepared baking dish. Spread it out evenly across the dish.
  2. Take your mashed potatoes and spread them over the lentil filling, sealing the edges with the potatoes to keep the filling moist while baking.
  3. Sprinkle shredded cheddar cheese over the top of the mashed potatoes.
Baking
  1. Place the baking dish in the oven and bake for about 20 to 22 minutes until the top turns golden brown and you see bubbling around the edges.
Serving
  1. Once done, take it out of the oven and let it cool for a few minutes. Serve warm and enjoy your hearty, protein-rich vegetarian dish.

Notes

To keep leftovers fresh, refrigerate in an airtight container for up to 4 days. For longer storage, you can freeze this dish for up to 2 months. Gently reheat portions on the stovetop or in the microwave until warmed through.
