Ingredients

  • 2 cups cherry tomatoes
  • 1 block feta cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • to taste Salt
  • to taste Pepper
  • 1 pound pasta (e.g., penne or fusilli)
  • for garnish Fresh basil
  • optional Red pepper flakes

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, place the cherry tomatoes and the whole block of feta cheese.
  3. Drizzle with olive oil and sprinkle in the minced garlic, salt, and pepper to taste.
Baking
  1. Place the baking dish in the preheated oven and bake for about 25-30 minutes, until the tomatoes are bursting and the feta is melting.
Cooking Pasta
  1. While the mixture is baking, boil a pot of salted water and cook the pasta according to package instructions.
  2. Drain the pasta, reserving a bit of pasta water for later.
Combine
  1. Once the baking is complete, mash the tomatoes and feta together until creamy.
  2. Add the drained pasta to the baking dish and mix everything well, adding reserved pasta water if needed for a creamy consistency.

Notes

Serve with a light green salad and garlic bread. Store leftovers in an airtight container in the fridge for up to three days or freeze for up to three months.
