Method
Preparation
- Preheat the oven to 350°F (175°C). Grease a 9-by-9-inch pan with butter or baking spray.
- In a medium bowl, whisk together the oats, brown sugar, flour, cinnamon, baking soda, and baking powder.
- Pour in the melted butter and stir gently until clumps form. Refrigerate the topping for at least 10 minutes.
Apple Filling
- Place the peeled, chopped apples in a large bowl. Add the granulated sugar and cinnamon, then toss until the apple pieces are evenly coated.
- Spread the apples in the prepared pan in an even layer.
- Stir the cornstarch into the apple juice until it dissolves. Pour the mixture evenly over the apples.
Assembly and Baking
- Sprinkle the chilled topping over the apples. For larger, crunchy clusters, gently squeeze a few handfuls of topping before scattering it across the pan.
- Bake for 40 to 45 minutes until the apples are fork-tender and the topping is golden brown.
Serving
- Let the apple crisp cool in the pan for 5 to 10 minutes before serving warm with vanilla ice cream.
Notes
Leftovers can be stored in an airtight container in the fridge for 3 to 5 days. You can also freeze the unbaked crisp for 2 to 3 months. Warm individual portions in a microwave or gently in a skillet.
