Ingredients

For the crumble topping
  • 1 cup old-fashioned rolled oats (not instant)
  • 1 cup packed brown sugar You can use light or dark brown sugar.
  • 1/2 cup all-purpose flour Can be substituted with gluten-free flour.
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 8 tablespoons butter, melted Use plant-based butter for a dairy-free option.
For the filling
  • 6 cups Granny Smith apples, peeled and cut into 3/4-inch chunks About 5-7 apples, or 1.5 pounds after cutting.
  • 1/3 cup granulated sugar Adjust to taste for sweetness.
  • 1/2 teaspoon cinnamon
  • 2 tablespoons apple juice Water or spiced rum can be substituted.
  • 1 tablespoon cornstarch Essential for thickening.
To serve
  • vanilla ice cream Consider dairy-free options as well.

Method

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9-by-9-inch pan with butter or baking spray.
  2. In a medium bowl, whisk together the oats, brown sugar, flour, cinnamon, baking soda, and baking powder.
  3. Pour in the melted butter and stir gently until clumps form. Refrigerate the topping for at least 10 minutes.
Apple Filling
  1. Place the peeled, chopped apples in a large bowl. Add the granulated sugar and cinnamon, then toss until the apple pieces are evenly coated.
  2. Spread the apples in the prepared pan in an even layer.
  3. Stir the cornstarch into the apple juice until it dissolves. Pour the mixture evenly over the apples.
Assembly and Baking
  1. Sprinkle the chilled topping over the apples. For larger, crunchy clusters, gently squeeze a few handfuls of topping before scattering it across the pan.
  2. Bake for 40 to 45 minutes until the apples are fork-tender and the topping is golden brown.
Serving
  1. Let the apple crisp cool in the pan for 5 to 10 minutes before serving warm with vanilla ice cream.

Notes

Leftovers can be stored in an airtight container in the fridge for 3 to 5 days. You can also freeze the unbaked crisp for 2 to 3 months. Warm individual portions in a microwave or gently in a skillet.
