Ingredients

For the Cake
  • 3 cups all-purpose flour Use for cake base.
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup chopped pecans Can be swapped with walnuts.
  • 1 cup vegetable oil Can use melted coconut oil for a lighter flavor.
  • 2 cups granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups fresh apples, peeled and finely chopped (Granny Smith preferred) Granny Smith apples are recommended for their tartness.
For the Sauce
  • 1 cup packed brown sugar
  • 1/4 cup milk Can be substituted with evaporated milk or half-and-half.
  • 3/4 cup butter (1.5 sticks, unsalted) Can use salted butter, reduce additional salt.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a bundt or tube pan well with cooking spray, shortening, and dust with flour if desired.
  2. In a large bowl, combine vegetable oil, granulated sugar, eggs, and vanilla extract. Stir until well blended and smooth.
Mixing
  1. In a separate bowl, sift together the all-purpose flour, salt, and baking soda. Add the dry ingredients to the wet mixture and mix until blended. Do not overmix; the batter will be thick.
  2. Gently fold in the chopped apples and pecans until evenly distributed.
Baking
  1. Spoon the batter into the prepared pan and spread evenly. Bake the cake for 1 hour.
Sauce Preparation
  1. About 10 minutes before the cake is done, combine the brown sugar, milk, and butter in a saucepan. Stir over medium heat until it comes to a gentle boil. Continue stirring for about 3 minutes, then remove from heat.
Finishing Up
  1. Remove the cake from the oven and pour the warm sauce over it while it's still in the pan. Let it soak in.
  2. Allow the cake to cool completely in the pan before inverting it onto a serving plate.
