  • 2 cloves garlic, minced
Chicken and Spices
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp pepper, plus more to taste
  • 4 pieces boneless, skinless chicken thighs (about 1 lb) Use chicken thighs for tenderness.
  • 1 tsp dried oregano
  • 1 tsp turmeric
  • 1 tbsp curry powder
  • 1 tbsp all-purpose flour
Broth and Base
  • 6 cups low-sodium chicken broth
  • 1/2 cup rice
  • 14 oz unsweetened coconut milk (1 can) Can substitute with light coconut milk for a lighter version.
Finishing Touches
  • 2 small apples, peeled, cored, and chopped Pears can be used as a substitute.
  • 1 tbsp fresh parsley, chopped

Method

Preparation
  1. Melt the butter in a large pot over medium-high heat. Add the onion, carrot, celery, and garlic with salt and pepper. Cook for about 3 minutes, stirring often, until the vegetables start to soften.
Cooking Chicken
  1. Add the chicken thighs to the pot and season them as they cook. Let them cook for about 5 minutes, or until they are no longer pink on the outside.
Flavor Base
  1. Stir in the oregano, turmeric, and curry powder, then sprinkle in the flour and stir well to coat everything.
Simmering
  1. Pour in the chicken broth and coconut milk, then add the rice. Lower the heat to medium-low and let simmer for about 10 minutes.
Finishing
  1. Shred the chicken in the pot or remove it first if preferred. Return the chicken to the soup, stir in the apples, and cook for a couple more minutes.
Serving
  1. Stir in the parsley, taste, and adjust seasoning if needed. Ladle into bowls and serve warm.

Notes

This soup pairs well with naan, bread, or a light green salad. It reheats well, making it great for leftovers.
