Ingredients
  

Salad Base
  • 4 cups fresh spinach Look for vibrant and crisp leaves.
  • 1 cup mushrooms, sliced Use your choice of mushrooms.
  • 1/4 cup red onion, thinly sliced Adjust quantity for desired flavor.
  • 1/4 cup cherry tomatoes, halved Rich in flavor and antioxidants.
Protein and Flavor
  • 6 slices turkey bacon Cook until crispy; can substitute with regular bacon if desired.
  • 1 tablespoon olive oil For sautéing.
  • to taste salt and pepper Essential for enhancing flavors.
Optional Dressing
  • to taste balsamic vinaigrette Add for an extra zing.

Method
 

Preparation
  1. In a skillet over medium heat, cook the turkey bacon until it’s crispy, about 6 to 8 minutes. Remove from heat, set aside to absorb excess grease, and crumble once cooled.
  2. In the same skillet, add olive oil, then add sliced mushrooms and red onion. Sauté for 4 to 5 minutes until softened and fragrant.
  3. In a large bowl, combine fresh spinach, sautéed mushrooms, red onion, halved cherry tomatoes, and crumbled turkey bacon.
  4. Drizzle optional balsamic vinaigrette over the salad, and toss gently until well mixed.
  5. Serve immediately while warm, and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Can freeze cooked turkey bacon and sautéed vegetables separately for up to 3 months. Reheat on the stovetop or in the microwave.
