Ingredients

Main Ingredients
  • 2 lbs beef eye of round or flank steak, trimmed of visible fat
  • 1/2 cup low-sodium soy sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp packed light brown sugar
  • 1 tbsp liquid smoke
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1/2 tsp fine sea salt

Method

Preparation
  1. Slice the beef against the grain into very thin strips, about 1/8 to 1/4 inch thick.
Marinating
  1. Add beef strips and coat thoroughly. Refrigerate for at least 4 hours or overnight for deeper flavor.
Drying
  1. Remove beef from marinade, let excess drip off, and pat lightly with paper towels. Arrange the strips on wire racks in a single layer without overlapping.
Finish Cooking
  1. When firm and dry, let cool for 20 to 30 minutes, then pack into an airtight container.

Notes

Store cooled jerky in an airtight container for up to 2 weeks at room temperature or refrigerate for up to 1 month. For long-term storage, freeze for up to 6 months. Jerky can be warmed slightly in a skillet or microwave before serving if desired.
