Preparation
- Preheat your oven to 150°C (300°F) and line your baking sheets with parchment paper.
- In a bowl, sift together the almond flour and powdered sugar. Set aside.
Meringue
- In a clean bowl, beat the egg whites until foamy. Gradually add granulated sugar while continuing to beat until stiff peaks form.
- Gently fold the almond flour mixture into the meringue until smooth and glossy.
Baking
- Transfer the batter to a piping bag and pipe small circles on the prepared baking sheet.
- Rest the piped shells for 30-60 minutes until a skin forms on the surface.
- Bake the macarons for 15-18 minutes until set, ensuring they do not brown. Allow to cool completely.
Ganache Preparation
- Heat the heavy cream in a saucepan until it just begins to simmer. Pour it over the white chocolate and let sit for a minute before stirring until smooth.
Assembly
- Fill half of the cooled macaron shells with the white chocolate ganache and top with another shell.
- Decorate with melted white chocolate to create mummy designs and add candy eyes.
