  • 4 cups whole grain bread (cubed)
  • 1 lb asparagus (chopped) Look for firm, vibrant green spears
  • 1 cup onion (chopped)
  • 2 cups fresh spinach
  • 6 eggs
  • 1 cup fat-free milk Can be substituted with almond or oat milk
  • 2 tomatoes (sliced) Sun-dried tomatoes can be used for deeper flavor
  • 1/2 cup reduced-fat feta Can substitute with goat cheese or ricotta
  • fresh basil Can substitute with fresh parsley or oregano

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Lightly grease a baking dish or use a non-stick spray.
  2. Layer the cubed whole grain bread in the bottom of the baking dish, followed by the chopped asparagus, onions, and fresh spinach.
  3. In a separate bowl, whisk together the eggs and fat-free milk. Pour this mixture evenly over the layered ingredients and press down gently.
  4. Top with sliced tomatoes and crumble reduced-fat feta cheese over the surface.
  5. Bake for 40 to 45 minutes until puffed up and set in the middle.
  6. Allow to cool slightly, garnish with fresh basil, slice, and serve warm.

Notes

This dish is versatile for breakfasts, brunch, or potlucks. It stores well in the fridge for up to 3 days and freezes for up to 3 months. Reheat on a skillet or in the microwave.
