Ingredients

Main Ingredients
  • 1 lb squid ink pasta (or black spaghetti) Choose high-quality squid ink pasta for best results.
  • 4 cloves garlic (thinly sliced) Fresh garlic provides better flavor than garlic powder.
  • 1/4 cup olive oil Can substitute with canola or avocado oil.
  • 1 tsp red chili flakes Adjust amount based on heat preference.
  • to taste fresh parsley Chop and sprinkle for garnish.
  • to taste Parmesan cheese Can substitute with nutritional yeast for a vegan option.
  • to taste lemon zest Adds a bright flavor to the dish.

Method

Preparation
  1. In a large pot of boiling salted water, cook the squid ink pasta according to the package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While the pasta cooks, heat the olive oil in a skillet over medium heat. Add the thinly sliced garlic and sauté until golden and fragrant, stirring frequently to prevent burning.
  3. Add the red chili flakes to the skillet and cook for about 30 seconds to bloom their flavor.
  4. Once the pasta is drained, add it directly to the skillet with the garlic and chili oil. Toss well to coat and use the reserved pasta water to adjust the consistency.
  5. Remove from heat and garnish with freshly chopped parsley, a generous sprinkle of Parmesan cheese, and a touch of lemon zest.
  6. Serve immediately while hot and enjoy this dramatic and delicious meal.
