Ingredients
  

For the Chicken Marinade
  • 2 lbs boneless skinless chicken breast, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 2 tbsp soy sauce Use tamari or coconut aminos for gluten-free.
  • 1 tbsp honey Can substitute with maple syrup or agave nectar for a vegan option.
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika Fresh herbs like thyme or oregano can be used instead.
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Skewers
  • 16 pieces wooden skewers, soaked in water 30 minutes Soaking prevents skewers from burning.
  • 8 pieces scallions, green parts cut into thin shredded strips Soak in ice water to help them curl.

Method
 

Preparation and Marinating
  1. In a mixing bowl, whisk together olive oil, soy sauce, honey, minced garlic, smoked paprika, salt, and black pepper.
  2. Add the chicken cubes and toss well to coat all pieces evenly. Cover the bowl and place it in the refrigerator for at least 30 minutes to let the flavors infuse.
Grilling
  1. Preheat your grill or grill pan to medium-high heat.
  2. Make sure the wooden skewers have been soaked in water for at least 30 minutes to prevent burning.
  3. Thread 4 to 5 chicken cubes onto each skewer, leaving the bottom 2 inches bare to create the 'broom handle.'
  4. Place the skewers on the grill and cook for 5 to 6 minutes on each side, until the chicken reaches an internal temperature of 165°F (74°C) and is nicely marked by the grill.
Final Touches
  1. While the chicken cooks, soak the shredded scallion strips in ice water for about 5 minutes to help them curl.
  2. Once the skewers finish grilling, gather a small bundle of scallion curls and press or tie them onto each skewer’s bare handle end to mimic broom bristles.
  3. Serve immediately alongside rice or green salad.

Notes

Leftover chicken can be refrigerated (off the skewers) for up to 3 days. Store scallion bristle bundles separately to maintain texture. Freeze cooked, unskewered chicken cubes wrapped tightly for up to 3 months.
