Preparation
- Beat the butter and sugar together in a large bowl until light and fluffy, about 3 to 5 minutes.
- Add the egg and vanilla extract, beating until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour and baking powder.
- Gradually mix the dry ingredients into the butter mixture until a soft dough forms, being careful not to overmix.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.
Baking
- Preheat your oven to 350°F.
- On a floured surface, roll out the chilled dough to about 1/4 inch thickness.
- Cut out circles using a cookie cutter and place them on a parchment-lined baking sheet.
- Bake the cookies for 9 to 10 minutes, or until the edges are set and lightly golden.
- Cool completely on a wire rack.
Decoration
- Once cooled, spread or pipe yellow royal icing onto the cookies and allow it to set.
- Pipe smiley faces on each cookie using the black icing.

- Store leftovers in an airtight container for up to one week.
