Ingredients
  

Main Ingredients
  • 12 oz short pasta (such as fusilli or penne)
  • 2 cups fresh basil leaves Look for vibrant green leaves without dark spots.
  • 1/2 cup baby spinach
  • 1/2 cup grated parmesan cheese Plus more for serving.
  • 1/3 cup pine nuts Toasted.
  • 2 cloves garlic
  • 1/2 cup extra-virgin olive oil
  • to taste Salt and black pepper Season gradually.
  • 8 pitted black olives, halved For eyeballs.

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a rolling boil. Add the short pasta and cook until al dente, about 10 to 12 minutes. Reserve 1/2 cup of the pasta water before draining.
Preparing the Pesto Base
  1. While the pasta cooks, combine fresh basil leaves, baby spinach, grated parmesan, toasted pine nuts, and garlic in a food processor. Pulse the mixture until finely chopped.
Blending the Olive Oil
  1. With the food processor running, slowly add the olive oil until the pesto is smooth and creamy. Taste and season with salt and pepper.
Tossing Pasta and Pesto
  1. Transfer the drained pasta to a mixing bowl. Add the pesto sauce and toss, adding reserved pasta water if needed to loosen the sauce and coat the pasta evenly.
Plating and Garnishing
  1. Spoon the pesto pasta onto plates. Arrange the black olive halves on top like spooky eyeballs.
Serving
  1. Sprinkle additional grated parmesan over the pasta and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Freeze the pesto separately for best results.
