Ingredients
  

For the biscuits
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed Keep butter cold for flakiness.
  • 3/4 cup buttermilk
For the gravy
  • 1 pound breakfast sausage Look for a high-quality sausage.
  • 2 tablespoons all-purpose flour Use for thickening the gravy.
  • 2 cups milk Adjust consistency with extra milk if needed.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 450°F (230°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  3. Cut in the cold, cubed unsalted butter until the mixture resembles coarse crumbs.
  4. Stir in the buttermilk until a soft dough forms.
Baking the Biscuits
  1. Turn the dough out onto a lightly floured surface and gently knead a few times.
  2. Roll the dough out to about 1-inch thickness and cut out biscuits.
  3. Place the biscuits on a baking sheet and bake for 12-15 minutes, until golden brown.
Making the Gravy
  1. While the biscuits are baking, cook the breakfast sausage in a skillet over medium heat until browned.
  2. Stir in 2 tablespoons of flour and cook for 1 minute.
  3. Gradually add the milk, stirring constantly until the gravy thickens, then season with salt and pepper.
Serving
  1. Once the biscuits are done, serve them topped generously with the sausage gravy.

Notes

For variations, substitute the sausage with chorizo or plant-based sausage and use gluten-free flour if needed. Store leftovers in an airtight container in the fridge for up to 3 days.
