Preparation
- Preheat your oven to 450°F (230°C).
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
- Cut in the cold, cubed unsalted butter until the mixture resembles coarse crumbs.
- Stir in the buttermilk until a soft dough forms.
Baking the Biscuits
- Turn the dough out onto a lightly floured surface and gently knead a few times.
- Roll the dough out to about 1-inch thickness and cut out biscuits.
- Place the biscuits on a baking sheet and bake for 12-15 minutes, until golden brown.
Making the Gravy
- While the biscuits are baking, cook the breakfast sausage in a skillet over medium heat until browned.
- Stir in 2 tablespoons of flour and cook for 1 minute.
- Gradually add the milk, stirring constantly until the gravy thickens, then season with salt and pepper.
Serving
- Once the biscuits are done, serve them topped generously with the sausage gravy.
Notes
For variations, substitute the sausage with chorizo or plant-based sausage and use gluten-free flour if needed. Store leftovers in an airtight container in the fridge for up to 3 days.
