  • 1 cup Old fashioned oats For the best chewy texture.
  • 1/2 cup Creamy peanut butter Regular creamy is easiest to use.
  • 1/2 cup Unsweetened cocoa powder Provides deep chocolate flavor.
  • 1/2 cup Honey or maple syrup Honey sets firmer, maple keeps it softer.
  • 1/4 cup Butter For richness and smooth melting.
  • 1/2 cup Semi-sweet chocolate chips For the topping.
  • 1 teaspoon Vanilla extract Enhances flavor.
  • 1 pinch Salt Balances sweetness.

Method
 

Preparation
  1. Line an 8x8 or 9x9 pan with parchment paper, leaving overhang for easy removal later.
  2. In a medium pot over low heat, add butter, peanut butter, honey (or maple syrup), cocoa powder, vanilla, and a pinch of salt. Stir until smooth and glossy.
  3. Turn off the heat and stir in the oats until fully coated.
  4. Press the mixture firmly into the prepared pan using the back of a spoon and then your hands for compacting.
  5. Melt the chocolate chips with a spoonful of peanut butter in the microwave or on low heat until smooth.
  6. Spread the melted chocolate over the oat layer and chill in the fridge for at least 1 to 2 hours.
  7. Slice using a sharp knife; if the chocolate is too firm, let the pan sit out for a few minutes before cutting.

Notes

For better texture, pack the oat layer tightly and ensure everything is mixed on low heat. Letting the bars chill sufficiently is crucial for clean slicing.
